Holiday Cooking

As you all prepare your menu for the 4th of July festivities, I encourage you all to be health conscious and include healthy items such as fresh produce into your menu plans. Instead of the usual hotdog or brat on the grill, try making kabobs with lean meats such as chicken, pork , or shrimp along with some healthy veggies. If your holiday fun is anything like my family’s, it ends up being several days full of great food that is very tempting so planning some healthy items into your menu will save some calories and extra pounds post holiday!

Happy Fathers Day!

My mom and dad came for the weekend, and of course my dad has to have some work to do.  Here he is with Sarah working in the garden.  Always active, and on the move.  79 years old…rides his stationary bike 15 miles a day!

I guess I know where I get my exercise habits from…the apple does not fall far from the tree!  It was a great weekend spending time with them.  You have taught me a lot over the years, and I appreciate all of it.  Happy Fathers Day Dad!  Happy Fathers Day to all you dads out there.  You deserve it!

Happy Birthday!

Happy 14th Birthday Nick!  He stays very busy between basketball and running, and today won his age group at the Hospital Hill run, which I will show some pictures tomorrow.  It was a great day…

…and remember, sometimes it is OK to “splurge” a little with the food/diet, and remember to enjoy life.  You make up for it in other ways, activity, decreased portions somewhere else.  Remember, enjoy the important things in life when they come, otherwise you may just miss out on them!

Happy Spring/Easter

The snow is finally gone, and it was a great day to be outside.  Walking along the bike trail with Buddy, then later doing some running on my own.  The ice is all off of the lake as well, and the water is going down.  All in all, I think Spring is finally getting here…

…now we just need to wait for everything to bloom, and get greener.  It is nice walking along the trail by the Lake.  Great time to think.  I hope everybody had an enjoyable Easter as well.

Mexico Vacation

Well, reluctantly, we are back to South Dakota.  We had a great vacation in Mexico…first time there.  If you can’t get out of the cold here, then you can explore Mexico this way.  I am going to take you on a tour of some of the great sights, and show you some of the things we did while on vacation.   You have to  take time to relax and enjoy, but you can still find time to stay active as well.   There were lots of activities going on, which definitely helped, because I have to say, the diet kind of went of vaction also.  For short time periods, that is OK also.  You have to enjoy some of these things in life as well.  You can help balance this out a little bit by continuing to stay active and exercise.  We took walks on the beach, ran outside, worked out in the fitness center they had, went snorkeling several times, and took tours of the sights that invovled a lot of walking as well.  Of course, we had plenty of R & R as well.  Stay tuned for a tour of Riviera Maya in Mexico!
