Last night at our STRIVE 2 Survive lecture, County Fair Foods supplied a delicious fruit pizza. Since it tasted so good, even with the recipe substitutions, I wanted to share the recipe with you. The blueberries and strawberries on top were extra tasty!
Ingredients:
1 C. all purpose flour
¼ c. confectioners sugar or sugar substitute
½ c. cold butter (Smart Balance)
8 oz pkg reduced fat cream cheese
1/3 c. sugar or sugar substitute
1 tsp vanilla extract
2 c. fresh strawberries halved
11 oz can mandarin oranges, drained
1 c. fresh blueberries
Glaze:
5 tsp cornstarch
1 & ¼ c. unsweetened pineapple juice
1 tsp lemon juice
In a large bowl, combine flour and confectioners sugar. Cut in butter until crumbly. Press onto an ungreased 12” pizza pan.
Bake at 350 degrees for 10-12 minutes or until very lightly browned. Cool on a rack.
In a small bowl, beat the cream cheese, sugar, and vanilla until smooth. Spread over the crust. Arrange the strawberries, oranges, and blueberries on top.
Glaze: in a small saucepan, combine the cornstarch, pineapple juice, and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Drizzle over fruit. Refrigerate until chilled.
