Following a healthy and balanced diet isn’t always easy. Sometimes the healthy foods cost a bit more and it may require a little more work compared to driving thru the fast food drive thru or putting a frozen pizza in the oven. One of my favorite meals that’s very healthy and well balanced is stir fry. It’s a great way to get a lot of good veggies, lean protein, and some whole grains. In addition, if you cook your veggies and meat with olive oil or canola oil on the stove, you’re getting additional healthy fats and omega 3 fatty acids. When I make this meal, like I did last night, I usually try to make a little extra as it’s great for left overs. I use the frozen stir fry veggies, lean skinless, boneless chicken breast, and whole grain rice (cooked in a rice cooker). These are my preferences, however you could make your own mixture according to your taste preferences, which is another great thing about stir fry! In addition to the balanced meal, this doesn’t take long to make at all so it’s a great option for when you’re in a hurry or don’t want to take a lot of time to prepare a meal. Now I must mention that my all time favorite meal is roast beef and mashed potatoes….but I’ll save that one for another day!
